Say ‘Yes’ to Zucchini Noodles!

If you know me you know I love veggies (especially zucchini). At a young age, I would beg my parents to make zucchini with cheese and tomatoes (which I still do when I go visit) fast-forward years later I’m still obsessed.

Since I love zucchini and make it a lot I often try new recipes to keep the simple taste pleasing without getting bored!

Recently, I’ve been enjoying zucchini noodles it’s fairly easy to make and leaves room to be creative and make it your own. Below find my perfect date night zucchini noodle recipe.

  • 1 box zucchini noodles
  • 3 tablespoons of EVOO
  • 1/2 tsp garlic powder or garlic
  • 1 cup of diced onions
  • 1 large tomato (1/2 can of diced tomatoes if wish)
  • 1 had full of mushrooms
  • 2 chicken breast cut up
  • Salt & pepper
  • 1 cup of parmesan cheese

Prep time 10 min   –  Cook time 10 min

  1. Add EVOO to frying pan cook onions, mushrooms, and chicken until brown.
  2. Add tomatoes, salt, pepper, and garlic powder. Mix together.
  3. Add zucchini noodles and let simmer on low for 3 minutes.
  4. Add 1 cup of parmesan cheese and let sit for 1 minute then carefully mix together.

Over eight years of perfecting and keeping this recipe a secret, I think it’s about time I share with everyone how to make my famous oatmeal chocolate chip cookies or as my friends call them “Tina’s Famous Cookies!” either way, keep reading to learn how to make this delectable treat!

Ingredients:

1/2 cup shortening

1 tbsp butter

1/3 cup granulated sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla

1/4 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

1 cup flour

1 cup oatmeal

1/2 cup chocolate chips (or more if you please!)

First blend together the shortening, butter, granulated sugar and brown sugar in a large mixing bowl. Next, add the egg and vanilla; be sure to mix well!

Then add the flour, salt, baking powder, and baking soda. Mix enough so all dry ingredients are moist. Finally, mix in your oatmeal and chocolate chips!

Here’s where it gets fun! Roll the dough into 1-inch balls and place on a greased cookie sheet (wax paper works well).

Bake at 350 for 8-11 minutes. (Makes 30 cookies!)

Cure Winter Blues With Homemade Beef Stew

Here we are, mid-winter and here I am wrapped up in a blanket writing today’s blog post. I thought I would mix things up today and share an easy recipe to warm you up while you research warm getaways.

This beef stew recipe is easy, delicious, and the best part is you can cook it in the crockpot!

Prep time: 20 minutes 

Cook time: 4 hours on high in the crockpot 

4 large carrots

4 large celery sticks

1 potato

1/2 onion

1 cup water

1 can of beef stock

Beef stew beef

Wine

*Feel free to include more of your favorite veggies

Cut all veggies and put in crockpot, brown meat for about eight to ten minutes (it’s okay if meat is still a little pink). Add water, beef stock and meat to crockpot. Add a few splashes of wine for extra flavor, stir and turn on high for 4 hours. Enjoy!
